An Immersive Sushi Experience

Step into an intimate kitchen at East at West One, where the experience begins with a Japanese-inspired cocktail or a perfectly chilled Asahi beer. From the moment you arrive, this is less about observation and more about immersion.

Then, Antonio takes over.

With over three decades of experience in some of the world’s most respected kitchens, he guides you through the true foundations of sushi-making, not shortcuts, but the techniques that define authenticity. You’ll learn how to prepare sushi rice with precision, how to select and handle sushi-grade fish with confidence, and how to craft maki and nigiri by hand, just as it’s done in professional kitchens.

Along the way, you’ll be introduced to something far rarer, Antonio’s signature sashimi cut. A technique refined over thirty-seven years, shared only within this experience, and not found anywhere else.

This is hands-on, considered, and deeply personal. And at the end of it all, you’ll sit down to enjoy the sushi you’ve created, a reflection of new skills, guided by true mastery.

The Chef Behind the Experience

Chef Antonio De Gracia brings Filipino heritage and thirty-seven years of Japanese culinary mastery to every session. Trained by a Japanese master chef in 1987, his career has taken him from Miyako at the Hyatt Regency Dubai to award-winning restaurants across the UK. He holds an AA Rosette and multiple Golden Chopstick Awards, including Best Restaurant in England.

At East at West One in Hagley, Antonio leads a kitchen where every dish reflects that same dedication to precision and craft. The Sushi Experience is an extension of that, a rare opportunity to learn directly from a chef of this calibre, in an intimate setting, in the heart of the West Midlands.

From the moment you arrive, everything is set up for an experience that feels both welcoming and memorable. You’ll be greeted with a complimentary drink, along with your own chef’s hat and apron, a small but fun nod to stepping into the role for the session.

At the end of the experience, how you enjoy your creations is entirely up to you. You’re welcome to stay, relax, and dine in the restaurant, perhaps with another drink or two, or you can choose to take everything away and enjoy it at home.

  • The Sushi Experience is a hands-on masterclass led by award-winning chef Antonio De Gracia. Unlike a typical cookery class, this is an intimate, expert-led session where you’ll learn authentic sushi techniques developed over a 37-year career in some of the world’s finest kitchens.

  • No experience is required. The session is designed for complete beginners as well as food enthusiasts who want to refine their skills under expert guidance.

  • You’ll learn the foundations of authentic sushi-making, including how to prepare sushi rice, select and handle sushi-grade fish, and create maki and nigiri by hand. You’ll also be shown Antonio’s unique signature sashimi cutting technique.

  • Each session lasts approximately 2 hours.

  • The Sushi Experience runs every Saturday at 3pm, with additional private bookings available on request.

  • You’ll be welcomed with a Japanese-inspired cocktail or a cold Asahi beer, guided through the sushi-making process, and enjoy eating everything you create at the end of the session.

  • The experience is £50 per person, or £40 for vegetarian participants.

  • Yes, a vegetarian option is available at a reduced price of £40 per person.
