Cuisine crafted by our head chef

At the heart of East at West One is Chef Antonio De Gracia, a culinary artist with over 30 years of experience crafting exceptional Pan Asian cuisine.

Born in the Philippines and trained by a Japanese master chef in 1987, Antonio’s journey has taken him from the bustling kitchens of Dubai’s Hyatt Regency to leading roles at some of the UK’s most celebrated restaurants, including YO! Sushi, Rofuto, and Mizu Pan Asian Restaurant. His work has earned him an AA Rosette and multiple Golden Chopstick Awards, including Best Restaurant in England.

Antonio’s cooking is defined by precision, creativity, and a deep respect for flavour. His menus weave together the best of Japan, China, Thailand, and Korea, delivering dishes that are as beautifully presented as they are unforgettable to taste.
