At the heart of our kitchen is Chef Antonio De Gracia, whose career spans over 30 years in some of the UK’s and Dubai’s most celebrated Japanese and sushi restaurants. His philosophy is simple yet powerful: to celebrate Asia’s rich diversity through bold flavours, elegant presentation, and heartfelt hospitality.

Of Filipino heritage and trained by a Japanese master chef in 1987, Antonio brings a deep respect for tradition alongside an eye for innovation. His expertise in Japanese sushi and sashimi is beautifully balanced with influences from China, Thailand, Korea, and beyond — creating a dining experience that feels both authentic and unexpected.

Throughout his journey, Chef Antonio has led kitchens at acclaimed restaurants such as Miyako at the Hyatt Regency Dubai, YO! Sushi, Rofuto, and Mizu Pan Asian Restaurant, earning an AA Rosette and multiple Golden Chopstick Awards, including Best Restaurant in England.
